This recipe is kosher for Passover, but works well anytime, especially around the holidays. Freezes well.

Ingredients:

3 eggs
1 1/2 teaspoons salt
1/3 cup canola oil
1 tablespoon sugar
6 potatoes, peeled
1 onion
Cooking spray

Directions:

Beat together the eggs, salt, oil and sugar. Shred six potatoes and one onion. Mix egg mixture in with the potatoes – make sure every shred is well coated (I use my hands). Pour into baking dish that’s been sprayed with cooking spray and bake at 450 for one hour.

Servings: Approximately 8 servings
